BBQ’d Pulled Chicken Thigh Slow-Cooker Recipe

This is an easy recipe – everything goes in the crockpot. Remove the skin and save it for making shmaltz. Remember, you only need one or two of the chilpolte chiles, so freeze the rest in individual snack bags.
BBQ Pulled Chicken for a Crowd
6-9 Chicken Thighs, skin removed
1 large onion
1 12 oz. can of Coke (not Diet), beer, or wine
1/2 cup of barbecue sauce
1-2 chilpotle chiles in adobo sauce
1 cinnamon stick
salt and pepper to taste
Put everything in the crockpot. I like to put the onion on the bottom, layer the chicken on top, salt and pepper the chicken, add the liquid (coke, beer or wine), then top with the barbecue sauce, chilpotle chiles, cinnamon stick and cumin.
Cook on high for a couple of hours.
